The Secret to Successful Cheese Cake

There are many cheese cake recipes, but the secret to cooking cheese cake is to cream the sugar and cream cheese thoroughly before adding the eggs.  Add eggs one at a time, beating after each egg, but only long enough to blend. 

Beating eggs too much will incorporate too much air into the cheese cake, and it will crack as it cools.  Also, cook cheese cake only as recipe states. DO NOT over-bake.
